Beef Tri Tip
It can also be called "triangle roast" or "bottom sirloin tip".
This is a great cut of beef full of flavor and super easy to cook with indirect heat or my favorite in a smoker with fruit wood.
A beef tri tip roast is a lean piece of meat and shouldn't be cooked past medium or about 135 degrees.
Apply Taboo BBQ spice rub "Scarlett", she's a nice balance spice rub and leave it over night. Right before cooking, add some more spices and place the meat in the barbecue or smoker fat side up using a drip pan if you are smoking on a gas or charcoal grill to eliminate flare ups and possible grease fire.
Mark your triangle piece one side so you know which way to cut once it is cooked and all look the same. Your butcher may be able to attach a string on one side.
Your barbecue should be steady at about 250 degrees, and don't rely on the thermometer on the lid get yourself a new $5 oven thermometer and place it inside.
Cook the tri-tip for 2 to 2.5hours rotating a few times during teh process for even cooking. It is ready when it reach 135F internal.
Remove it from your barbecue and let it sit for 40 minutes wrapped in foil paper in a warm place.
Once you are ready slice thinly across the grain to serve.
